Ingredients
  

  • 1 lb Roma tomatoes
  • 1 large English cucumber
  • ½ medium red onion sliced
  • 2 avocados diced
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice (from 1 medium lemon)
  • ¼ cup cilantro chopped
  • 1 tsp sea salt or 3/4 tsp table salt
  • tsp black pepper

Instructions
 

  • Combine chopped tomatoes, cucumber, red onion, avocados, and cilantro in a large bowl.
  • Drizzle with olive oil and lemon juice; toss gently to combine.
  • Season with sea salt and black pepper just before serving.
