Instructions
Preheat the oven to 375°F and coat a baking dish with cooking spray.
Spread 1 1/2 cups of marinara sauce in the bottom of the pan.
Mix ricotta, 1 1/2 cups mozzarella, Italian seasoning, egg, parmesan cheese, salt, and pepper in a bowl.
Fill each pasta shell with the ricotta mixture and place in the baking dish.
Spoon remaining marinara sauce over the shells, then sprinkle remaining mozzarella cheese on top.
Cover the dish with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is golden.
Sprinkle with parsley and serve hot.
Notes
Undercook the pasta shells slightly for best texture after baking.
