Instructions
Preheat the oven to 170C/325F.
In a bowl, combine crushed cookies, sweetener, and melted butter; transfer into a greased cake pan.
Blend filling ingredients in a high-speed blender until smooth; pour over the crust.
Bake for 40-55 minutes until the middle is set; let cool completely, then refrigerate for at least 4 hours.
Notes
For best results, let the cheesecake firm up in the fridge for several hours before serving.
