Ingredients
  

Crust Ingredients

  • 1 recipe Sugar free cookies crushed
  • ½ cup granulated sweetener of choice, use erythritol
  • cup butter vegan or standard

Filling Ingredients

  • 1 cup non-fat cream cheese
  • 2 cups non-fat Greek yogurt
  • 2 large eggs
  • cup granulated sweetener of choice, use erythritol
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 170C/325F.
  • In a bowl, combine crushed cookies, sweetener, and melted butter; transfer into a greased cake pan.
  • Blend filling ingredients in a high-speed blender until smooth; pour over the crust.
  • Bake for 40-55 minutes until the middle is set; let cool completely, then refrigerate for at least 4 hours.

Notes

For best results, let the cheesecake firm up in the fridge for several hours before serving.
