cut into 1 inch pieces

eggs
beaten
salt and pepper
to taste

all-purpose flour

cornstarch
oil
for frying
Sauce
1
tsp
vegetable oil
1
tsp
minced fresh garlic

honey

soy sauce
(reduced sodium if possible)

ketchup

brown sugar

rice vinegar

toasted sesame oil

cornstarch

sesame seeds

sliced green onions
Instructions
Combine eggs, salt, and pepper in a bowl.
Mix flour and cornstarch in a shallow bowl.
Dip chicken pieces in egg mixture, then in flour. Repeat until all chicken is coated.
Heat oil in a deep pan to 350°F. Fry chicken in batches for about 5 minutes until golden brown.
Drain chicken on paper towels.
While chicken cooks, mix honey, soy sauce, ketchup, brown sugar, rice vinegar, sesame oil, and cornstarch in a bowl.
Heat vegetable oil in a pan, add garlic, cook for 30 seconds, then add the sauce mix and simmer for 3-4 minutes.
Toss the crispy chicken in the sauce, sprinkle with sesame seeds and green onions, then serve.
Notes
The sauce can be made up to two days in advance.
