Ingredients
  

Waffle Batter

  • 2 ¼ cups flour plain / all purpose
  • 2 ½ tbsp caster sugar or superfine sugar
  • 1 pinch cooking salt or kosher salt
  • 4 tsp baking powder
  • 1 ⅓ cups milk full fat, slightly warmed
  • ½ tsp vanilla essence
  • 4 large eggs at room temperature
  • 150 g unsalted butter melted and slightly cooled

Instructions
 

  • Whisk the flour, sugar, baking powder, and salt in a large mixing bowl.
  • Add milk, eggs, and vanilla into the dry ingredients, and whisk to combine. Then add melted butter and whisk until lump-free.
  • Refrigerate the batter for at least 2 hours or overnight for better texture and flavor, then preheat the waffle maker.
  • Pour the batter into the waffle maker, being careful not to overfill. Cook until golden and crisp, then serve immediately with toppings.

Notes

Resting the batter improves the texture and flavor. Waffles can be stored in the fridge for 3-4 days, and reheated as desired.
