- ½ cup unsalted butter softened
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe mashed bananas
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ cups chopped strawberries
- 1 tbsp all-purpose flour for tossing strawberries
Preheat oven to 375°F. Spray two 9x5 loaf pans with non-stick spray.
Cream together softened butter and sugar until light and fluffy.
Beat the eggs and add to the mixture, then add mashed bananas.
Sift flour, baking soda, and salt. Gradually mix into the banana mixture until just combined.
